Goodbye Gluten

The results are back, the surgery over and it's official. Katelee has celiac disease. She is going gluten free. The diet will be a bummer at first (and at times later-birthday parties, school lunches, church snacks, etc) but we will adjust. I am so glad we found out what was wrong. She was in a lot of pain and it was so sad. Many people with celiac don't manifest the excruciating symptoms, but the damage is still being done to their insides and attributing to higher risks of other dangerous illnesses-cancer (lymphoma), thyroid disease, anemia, internal bleeding, malnutrition, etc. Anyway, we are working on not cross contaminating her food from ours. Here she is pre-surgery at Primary Children's: It's a disturbing sight seeing your child go under anesthesia and flopping around the table like a fish. But the grape scented gas worked, and she was off to sleep in no time. She woke up very unhappy but was back to her happy self by the end of the day. If anyone has super great bread/rolls/cakes/cookie recipes that are gluten free, please share! Also, here is Grant after his school play. He was obviously Benjamin Franklin. For some reason, he isn't wearing the pink barbie glasses I gave him to wear for his big speaking part. He looked dashing and spoke ever so eloquently!

My little sister is going through some test right now to see if she is gluten intolerant, which I guess is a milder case of celiac. She is off gluten for 3 months to be tested. It for sure is an adjustment. Good luck. You can find tons of stuff in the grocery store that are gluten free including cake mixes.

Oh Kara, what a bummer!!! It is hard enough doing it as an adult and understanding why but I can't imagine having to do it with your sweet little girl. I just went to the gluten free expo and tried lots of good stuff. I will have to email some to you. Good luck and I know it is worth it to not have her be sick anymore. Let me know if I can do anything. I am no expert but I am surviving:)

That's too bad that she has celiac's! I am not sure if you know the Beardalls that live across the street from me, the dad just found out he has celiac's. Maybe you can hook up with Kelli and figure out some recipes.

Hey Kara- that is hard for a little kid. :( So sorry you guys have to deal with this. It is an adjustment. I had lots of testing earlier this year for this exact same thing. They think I am a little gluten intolerant, but I don't have Celiac luckily. Instead they found some other things. My Mom actually was tested this year too and she is a bit gluten intolerant too and she's gone down the road of gluten free and it's definitely helped.
But anyway, Todd Jacob's Sister-in-law has Celiac. I know this because of the blog Todd's wife does and I saw a link on their blog. Anyway- here is her blog address. She has some great stuff that looks super yummy.

Poor Katelee, I know someone that has celiac so I can ask her if she has any recipes. Her almost 2 year old is type 1 diabetic so they have serious diet restrictions. She just had another baby so I will check with her in a few weeks. Good luck figuring it out.

Hey Kara,
I was just asking David in an e-mail last night about Katelee and the celiac disease. Poor baby but at least you know what the problem is and how to deal with it. I'm glad the surgery went well and she is back to herself. Hopefully she will begin to feel better very soon. She has been in my prayers since Carl had told Russell about it last week. I know in most of the grocery stores now they have a whole area of gluten free foods so check with yours to see if they do.

I bet Grant was an awesome Benjamin Franklin. He has so much personality!!

My friends daughter has it and she is the queen of making all things gluten free so if you have any questions I can ask her. There is a bread that she buys that is good.

Oh geez! Poor Katelee, poor you, poor poor poor. Well, I hope she can feel better now that you know the root of all the EVIL! Good luck with the recipes, I am gonna talk with some friends who have that disease and see if they have good recipes for ya. hope all is well.
